Hilton Paris Opera - an innovative collaboration with “Le Pain Quotidien”

On February 15th 2016, the prestigious historical Hilton Paris Opera, which just celebrated its first anniversary as Hilton, and the organic restaurant chain, Le Pain Quotidien, announce the opening of the first Le Pain Quotidien within a hotel. The new restaurant, located on the ground floor of Hilton Paris Opera, seats 80 guests and offers a diverse menu, suitable for hotel guests as well as Parisians and travelers visiting the Saint-Lazare area.

It is located in the former Terminus Café location. Terminus Café restaurant was not profitable and suffered from an old-fashion image. The loss went up to -350K€ in 2014 and -450K€ in 2015.

A new restaurant offering was needed to revitalize the hotel restaurant. This first-ever hotel-collaboration with Le Pain Quotidien world-wide was ideal. “We are delighted to partner with Le Pain Quotidien to complement our food & beverage offerings, and most importantly to support the revitalization of the Saint-Lazare neighbourhood," says Sofia L. Vandaele, General Manager of Hilton Paris Opera. In this culture of healthy, balanced eating, Le Pain Quotidien is a seamless addition to Hilton Paris Opera as the brand exhibits only the best in quality.

Le Pain Quotidien franchise remains true to its original concept, which has attracted guests for over 25 years. The nearly 1,600 square-foot Hilton Paris Opera location also hosts the restaurant’s signature wooden furniture, communal table and the brand’s organic market which sells items such as spreads, jams, cooking oils, salt & pepper, cook books, coffees and teas. Open Monday to Sunday from 7:00 a.m. to 10:00 p.m., the menu highlights organic products and includes brunch, salads, soups, pastries, sharing platters and more.

The renovation works took 2 and half months, lead by the team of Antique Design from Geel, Belgium and architect Marie Marouli, EZCT from Paris, France.

Recruitment was organised trough posters in place on the restaurant façade during renovations and open to internal referrals and development of Hilton Team Members. Adrien Le Yondre, already Maître D’ at Terminus Café, has been promoted to Restaurant Manager at Le Pain Quotidien. All Hilton Paris Opera Team Members were invited to a pre-opening test lunch. Le Pain Quotidien’s team of 15 staff benefited from cross trainings in different Parisian Le Pain Quotidien locations.

To communicate on this new restaurant’s arrival, a press event was organised, generating close to 90 articles. Many partnerships were initiated with bloggers, food websites, OTCP and even with Deliveroo to allow guests to enjoy Le Pain Quotidien @home or @work. Special offers were put in place and provided to our corporate clients in the Saint-Lazare area. A dedicated Facebook page also allows consistent communication platform with our loyal followers.

Guests loyalty and satisfaction to Le Pain Quotidien is increasing, as Tripadvisor results show as well as an internal spring time benchmark analysis. To date, Le Pain Quotidien welcomes on average 220 to 300 clients per day, with a daily revenue of approximately 4,500€.

Through this unprecedented collaboration, Le Pain Quotidien is now strategically located near the Gare Saint-Lazare, the Opera and the local department stores, an area which attracts nearly 70,000 visitors daily. Additionally, Hilton Paris Opera now offers Parisians and hotel guests a food & beverage outlet that is based on a tradition of eating well, which complements the hotel’s two other dining options, Le Grand Salon and Le Petit Bar.
