This award recognizes a new concept, service, or initiative implemented in hotels that demonstrates the hospitality industry's capacity to innovate and provide guests with a better quality of service in terms of food and beverage as well as entertainment. The concept must have been implemented within the two years prior to the date of application and must be currently operational.
The winner of this award will demonstrate exceptional innovation in F&B&E and be able to effectively communicate their vision and success in creating an exceptional experience for guests.

Celebrated in over ten countries and honored by the Michelin guide, international Chef Akira Back has opened his first European restaurant on avenue George V, offering Parisians and travelers a modern Japanese cuisine with international influences.
Chef Akira Back - A Unique Journey
Born in South Korea and raised in Aspen, Colorado, Akira Back transitioned from a professional snowboarding career to the culinary world. After training under sushi master Kenichi Kanada, Back opened his first restaurant, Yellowtail by Akira Back, at the Bellagio Hotel in Las Vegas in 2008. Known for his innovative and creative approach, he has expanded his culinary empire to 21 restaurants worldwide, earning accolades such as "Best Chef in Las Vegas" and a Michelin star for his restaurant Dosa in Seoul.
A Modern Japanese Gastronomic Experience
Back’s cuisine is renowned for its finesse and creativity, featuring signature dishes like Tuna Pizza and Miso Black Cod. His new restaurant at Prince de Galles Hotel, designed by London-based agency Blacksheep, blends Eastern and Western inspirations, accommodating up to 90 guests in an elegant, sophisticated space.
Suite Akira
The private dining room, Suite Akira, hosts up to 20 guests for special events, featuring artworks by Back's mother, Young Hee Back. The space embodies the contemporary and opulent spirit of Japanese design, with handcrafted furniture and luxurious materials.

This project reflects a fusion of the hotel's modern Art Deco architecture and Back’s innovative Japanese cuisine, offering a unique dining experience in Paris.
