This award will take into account the experience and the venue rather than the quality of the food.
The project:
The Sheraton Lisboa Hotel & Spa has successfully revitalized a 152 sqm unused space near its entrance into a dynamic venue for seasonal F&B pop-ups, attracting both local and international audiences. These pop-ups, strategically located just 15 meters from the kitchen for efficient service, offer immersive and themed dining experiences that align with seasonal trends.
Since 2022, Sheraton Lisboa has launched creative concepts such as the Après-Ski experience, the Oasis Middle Eastern retreat, and the Euro 2024 Kiosk. Each concept combines culinary innovation with cultural immersion. For instance, the Après-Ski brought a winter wonderland ambiance with regional specialties like cheese fondue, while the Oasis celebrated Middle Eastern flavors with dishes like lamb shawarma and activities like belly dancing. The Euro 2024 Kiosk captures Lisbon’s kiosk culture and soccer excitement, providing themed snacks and beverages while enrolling 250 new Marriott Bonvoy members monthly.
These pop-ups are not only financially sustainable, generating monthly revenues ranging from €10K to €18K, but are also aligned with Marriott's values of sustainability and community engagement. Ingredients are locally sourced within 50 miles, and food waste is managed through partnerships with organizations like Refood.
Sheraton Lisboa’s pop-ups enhance guest experiences, strengthen ties with the local community, and demonstrate innovation in the hospitality industry. By offering accessible, affordable, and engaging experiences, the initiative attracts a diverse audience, generates additional revenue, and promotes sustainable practices.
