The project:
Accor’s collaboration with Klimato during COP28 in Dubai in 2023 marked a significant step towards sustainable dining. As part of this initiative, 10 chefs from various Accor hotels across the UAE, representing brands from economy to ultra-luxury, developed 45 innovative low-carbon recipes. These dishes, with an average carbon footprint of 0.5 kg CO2 per meal, were introduced to hotel menus to raise awareness about the environmental impact of food choices and promote sustainable dining.
Klimato’s role was pivotal, involving the calculation of carbon footprints for 5,450 recipes, providing data that helped chefs optimize their ingredients and reduce emissions. The partnership included training 150 Accor employees through webinars, equipping them with knowledge about sustainability and practical methods to reduce the carbon footprint of meals. The initiative also introduced carbon footprint labels on menus, educating guests and encouraging informed dining choices.
The results of this initiative were impressive. Over 63% of guests opted for lower-carbon dishes, with 24% reporting increased awareness of food-related carbon footprints. Vegetarian options, comprising 40% of the new recipes, achieved high guest satisfaction rates of 89%. Additionally, menu labeling and educational campaigns significantly boosted guest engagement and satisfaction.
This project not only aligns with Accor’s sustainability goals but also sets a precedent for responsible dining in the hospitality industry. The initiative’s success has inspired plans for global expansion, including the creation of a low-carbon recipe book and the scaling up of the Chef Squad program to include more participants worldwide. By combining culinary innovation, sustainability education, and guest involvement, Accor’s partnership with Klimato has become a model for reducing the environmental impact of food and beverage operations while enhancing guest experiences.
